Wenche Emblem Larssen

Wenche Emblem Larssen is a food scientist with 25 years of experience in the research institute sector. She currently serves as a research manager at the Norwegian research institute Møreforsking. Her research primarily focuses on seafood quality, with particular emphasis on sensory evaluation and product development. This includes investigating how sensory attributes—such as taste, food safety, and health claims—influence consumer preferences.

Larssen has led more than 40 projects related to seafood quality, shelf-life studies, utilization of rest raw materials, and sensory evaluation. She has authored 20 peer-reviewed articles, over 50 scientific reports, and contributed to several book chapters. In recent years, she has delivered several international lectures on the sensory quality of marine products. Larssen is the chair of the Norwegian Sensory Network and serves as Norway’s representative in the European Sensory Science Society (E3S).
