Sara Spinelli, University of Florence, Italy
Sara Spinelli is a researcher in sensory science at the SensoryLab – Department of Agriculture, Food, Environmental and Forestry of the University of Florence (Italy). She is qualified as Associate and Full Professor in Food Science and Technology and in 2023 she was Visiting Scholar at the Pennsylvania State University (USA) as a Fulbright Research Scholar.
Her research is focused on the study of the factors that affect individual differences in food preferences and perception, including taste responsiveness and personality traits, with a particular focus on vulnerable populations (children, patients with specific conditions), the role of emotions in the affective experience of foods and in product innovation. On these topics she authored over 70 scientific papers published in peer-reviewed journals and invited book chapters.
From 2022 she is chair of the Italian Society of Sensory Sciences and from 2023 she is the chair of the European Sensory Science Society. From 2016 she is a member of the Editorial Board of the journal Food Quality and Preference.
She is/has been a member of the organizing and scientific committee of several international conferences in sensory science and in 2019 she was awarded with the Food Quality and Preference Award - Contributions from a researcher of the future. and in 2022 she got a Fulbright Research Scholarship.
