Jane Parker, University of Reading, UK
Jane is Professor of Flavour Chemistry in the Department of Food and Nutritional Sciences at the University of Reading, UK. Her research interests are in flavour and olfaction, the latter stimulated by the surge in Post-COVID loss of taste, aroma and chemesthesis. Her focus is on the mechanisms of aroma loss (anosmia) and particularly in olfactory recovery which can begin with the return of a very distorted sense of smell (parosmia) and can be debilitating and life changing. She has a wide interest in flavour formation and how aromas interact i) with each other, ii) with other sensory modalities, iii) with components of the food matrix.
